Preparing a baked chicken offers infinite possibilities. This ingredient is capable of adapting to different types of flavors and tastes. It is also an ideal preparation for special occasions and celebrations. In this case it is accompanied with a thick puree based on onions and peaches. A combination of sensations with a sweet touch to captivate everyone.
Ingredients
1 chicken of about 2 kilograms
2 white onions
1 ajoporro (the white part)
1 large ripe peach
Salt to taste
Preparation
Preheat the oven to 190 ºC (374 ºF).
Clean the chicken of any fat, entrails or down it may have. Season well with salt to taste on the inside and outside.
Place it in a baking tray that is not too big and that allows the chicken to be arranged with the breasts upwards. Pour half a glass of water on top and place in the oven.
Bake for 30 minutes at 180 ºC (356 ºF) with temperature up and down in the lowest part of the oven.
In the meantime, finely chop the onion and garlic and cut the peach into pieces.
Remove the chicken, turn it over and place the onion, leek and peach around it.
Return the dish to the oven and bake for another 40 minutes.
After this time, turn the chicken over again and brown it for another 20 minutes at 190 ºC (374 ºF). Once done, remove from the oven.
Place the chicken in a bowl and add the onion and the roasted peach in the blender.
Blend well, add salt and pour into a bowl to accompany the roast chicken.
Serve the baked chicken with the puree.
